I use this in cookie batter to keep cookies moist and chewy. About 1-2 tbs. mixed thoroughly in a batch, and the cookies stay soft.

I have used above the recommended amount of this pectin for my recipes and have not found it to be affective in thickening my jams. It is as if I put nothing in it.
